Crunchy Superfoods Snack Mix

Ingredients
- 2 cups (500 mL) Honey Shreddies
- 1/2 cup (125 mL) coconut flakes
- 1/2 cup (125 mL) pumpkin seeds
- 2 tbsp (30 mL) flax seeds
- 2 tbsp (30 mL) coconut oil, melted
- 1/4 cup (60 mL) dark chocolate chips
- 1/4 cup (60 mL) dried blueberries
Directions
In a bowl, mix the honey Shreddies, coconut flakes, pumpkin seeds, and ground flax seeds. Pour the coconut oil over the ingredients and stir everything together. Spread the mixture on a baking sheet lined with parchment paper.
Bake, stirring once, in a preheated oven at 350°F (180°C) for 15 to 18 minutes or until the mixture is lightly toasted. Allow to cool completely.
Add the chocolate chips and dried blueberries to the cereal mixture and stir everything together. Store in an airtight container.
